Lasagna

Ingredients
  

  • 3 tbsp extra virgin olive oil
  • 1 cup red onion chopped
  • 2 cloves garlic minced
  • 1 lb Italian sausage crumbled
  • 28 oz can tomatoes crushed or petite diced
  • salt and pepper to taste
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 1 cup full-bodied red wine
  • 2 tbsp tomato paste
  • 2 tbsp sugar
  • lasagna noodles cooked according to package instructions
  • 32 oz whole milk ricotta cheese
  • 4 cups mozzarella cheese grated

Instructions
 

  • In a Dutch oven or large sauce pan, heat the olive oil on medium heat.
  • Add the chopped onion and sauté for 5 minutes.
  • Add the garlic and sauté 1 minute.
  • Add the Italian sausage and sauté just until it is no longer pink.
  • Add tomatoes, salt, pepper, oregano, basil, red wine, tomato paste, and sugar.
  • Stir and bring to a simmer.
  • Reduce heat and simmer for 30 minutes.
  • Cook lasagna noodles and drain
  • Place a layer of noodles in an oiled baking dish.
  • Add half of the ricotta cheese.
  • Cover with the tomato and sausage sauce.
  • Add another layer of noodles, the other half of the ricotta, and sauce.
  • Place another layer of noodles on top and pour over any left over sauce.
  • Top with the mozzarella cheese.
  • Place foil over the baking dish and bake at 375° for 30 to 45 minutes
  • Remove from oven, keep covered, and let sit for 15 minutes.
  • Garnish with fresh basil, parmasan cheese, crushed red pepper flakes. (optional)
  • Serve.
