Basic Focaccia

Start with this basic focaccia dough, then customize it with your favorite toppings.
You can also use it as a pizza dough or for sandwiches.

Ingredients
  

  • 3 cups All purpose flour plus more for dusting
  • 1 tsp Sea salt plus more for topping
  • cups Warm water
  • 1 Packet of yeast
  • 1 tbsp Sugar
  • 2 tbsp Extra virgin olive oil plus more for drizzling
  • Fresh ground pepper to taste

Instructions
 

  • Add yeast, 1 tablespoon of sugar, and 1 tablespoon of olive oil to 1¼ cups warm water.
  • Place 2 cups of flour and a tsp of salt in a mixer fitted with a dough hook attachment and mix for one minute.
  • Slowly add the wet mixture to the flour and salt. Your mixer should be on the lowest setting. It should take about 2 minutes to slowly add the water.
  • Add the remaining cup of flour. Raise the mixer speed up to the second setting and mix for 8 minutes. You may need to add extra flour one tablespoon at a time if the dough is still sticky.
  • On the last minute of mixing, add a tablespoon of olive oil.
  • Place dough in a bowl cover and let rise for 2 hours.
  • Pre-heat oven to 400.
  • When dough has risen, place on a floured surface and knead dough by hand.
  • Place in a well-oiled pan of your choice (round, rectangle, or pizza pan) and spread the dough into the pan, using your finger tips to create dimples in the dough.
  • Now add your toppings. In this case we are sprinkling salt and pepper then drizzling with olive oil. The dimples in the dough help to hold your toppings.
  • Bake for 25-30 minutes. The focaccia should be golden brown and will make a hollow deep thumping sound when you tap on it. And your house should smell like fresh baked bread,
