Add yeast, 1 tablespoon of sugar, and 1 tablespoon of olive oil to 1¼ cups warm water.
Place 2 cups of flour and a tsp of salt in a mixer fitted with a dough hook attachment and mix for one minute.
Slowly add the wet mixture to the flour and salt. Your mixer should be on the lowest setting. It should take about 2 minutes to slowly add the water.
Add the remaining cup of flour. Raise the mixer speed up to the second setting and mix for 8 minutes. You may need to add extra flour one tablespoon at a time if the dough is still sticky.
On the last minute of mixing, add a tablespoon of olive oil.
Place dough in a bowl cover and let rise for 2 hours.
Pre-heat oven to 400.
When dough has risen, place on a floured surface and knead dough by hand.
Place in a well-oiled pan of your choice (round, rectangle, or pizza pan) and spread the dough into the pan, using your finger tips to create dimples in the dough.
Now add your toppings. In this case we are sprinkling salt and pepper then drizzling with olive oil. The dimples in the dough help to hold your toppings.
Bake for 25-30 minutes. The focaccia should be golden brown and will make a hollow deep thumping sound when you tap on it. And your house should smell like fresh baked bread,
