Croque Monsieur

Food processor with cheese grater attachment

Ingredients
  

  • 16 oz Grueyer cheese grated
  • 2 tbsp Brandy
  • 2 tbsp Sour cream
  • 1 tbsp Dijon mustard
  • ¼ tsp Pepper fresh ground
  • 8 slices Sourdough bread
  • 2 Eggs
  • 4 slices Prosciutto
  • 4 tbsp Butter

Instructions
 

  • In a bowl, mix the grated cheese, brandy, sour cream, Dijon mustard, and pepper.
  • In another bowl large enough to accommodate the bread, beat the 2 eggs, then add a spoonful of the cheese mixture.
  • Heat the butter in a large sauté pan.
  • Spread cheese mixture on one side of the bread top with a slice of proscuito, then add a dollop more cheese. Add the top slice of bread and coat with the beaten eggs.
  • Place in the sauté pan and grill on medium 5 minutes on each side, until the bread is golden brown and the cheese is melted.

Notes

This is such a wonderful, gooey sandwich.
Serve with cream of tomato soup or minestrone. Add a green salad to complete the meal. 
Pair with a crisp white wine. I like a Muller-Thurgau with hints of tarragon and Dijon.
