In a bowl, mix the grated cheese, brandy, sour cream, Dijon mustard, and pepper.
In another bowl large enough to accommodate the bread, beat the 2 eggs, then add a spoonful of the cheese mixture.
Heat the butter in a large sauté pan.
Spread cheese mixture on one side of the bread top with a slice of proscuito, then add a dollop more cheese. Add the top slice of bread and coat with the beaten eggs.
Place in the sauté pan and grill on medium 5 minutes on each side, until the bread is golden brown and the cheese is melted.
Notes
This is such a wonderful, gooey sandwich.Serve with cream of tomato soup or minestrone. Add a green salad to complete the meal. Pair with a crisp white wine. I like a Muller-Thurgau with hints of tarragon and Dijon.
