Saluhall Sandwiches
Inspired by my visit to Saluhall, the food hall in Stockholm Sweden.
Ingredients
The Dressing
- 3 tbsp extra virgin olive oil
- 1 tbsp Balsamic vinegar
Sandwich
- 2 Hoagie Rolls sliced horizontally
- 1 Large tomato sliced
- 2 oz Brie cheese
- 4 oz Salami Toscano or any sliced salami
- 1 handful Pea shoots or other micro greens
Instructions
Make the dressing
- Combine the olive oil and balsamic vinegar, then whisk
Assemble the sandwich
- Cut the rolls in half lengthwise and brush both the tops and bottoms of the cut sides of the rolls.
- Line the bottom of the rolls with the salami. Next, layer on the Brie cheese, tomato slices, and pea shoots.
- Add the top of the roll and serve

Swedish Lesson:
“Saluhall” means market house. Every major city in Sweden has one. The food is all fresh ingredients beautifully displayed. I enjoyed a morning of gourmet shopping and a picnic-for-one, overlooking the harbor near the Royal Palace, while my husband was working. But don’t go solo! These sandwiches are super easy to make. Whip up a whole Smorgasbord! Variations include: Ost and Skinka- Ham and cheese Ost and Gront- Cheese and literally “green stuff” like pea shoots. Any baby greens will work, however pea shoots garnish every thing in Sweden. I grow a pot full of Austrian winter peas to use in my cooking.Nutrition
