Family Cornbread
Family Cornbread
For the picky eaters in my family, this cornbread has the perfect texture! Great with savory dishes like chili or as a sweet treat drizzled with honey.
Equipment
Ingredients
- 1 cup all purpose flour
- 1 cup yellow corn meal Bob's Red Mill is best
- ¼ cup brown sugar
- 1 tbsp Baking powder
- ½ tsp Baking soda
- ½ tsp fresh ground nutmeg
- 1 tsp salt
- ½ cup milk
- ½ cup butter milk
- ¾ cup sour cream or plain yogurt
- 2 large eggs
- ¼ cup vegetable oil see notes below
Instructions
- Pre heat oven to 375°
- Mix the dry ingredients in a large bowl, making a well in the middle.
- Mix the wet ingredients in a small bowl.
- Pour the wet mixture into the dry and mix until the batter comes together
- Pour into a well-oiled cake pan
- Bake 20 to 25 minutes
Notes
You can change the flavoring of the cornbread any way you like.
Try jalapeno and cheese…
Add frozen corn kernels…
Substitute pumpkin puree, apple sauce, or peach puree for the ¼ cup vegetable oil as a tasty twist to get picky eaters to give it a try.
