I like to use a mixture of apples: tart, sweet, firm, crisp, and tender varieties. I do this with pies and apple sauce too.  This way, you can create your own signature flavor and texture.
For this cake, I pulse the apples in a food processor to create a mix of apple chunks, some small and some big.  The small chunks make the cake tender and moist. The big chunks make for big surprise bites of flavor!
