This tender apple cake is like the first taste of fall! Serve for breakfast, coffee break, or dessert with vanilla ice cream and a drizzle caramel sauce.
Sift together the flour, baking powder, baking soda, and salt in a bowl and set aside.
In an electric mixer fitted with a paddle attachment, add the butter, sugar, and cream until light and fluffy.
Add the eggs one at at a time, mixing well after each egg.
Fold in the flour mixture
Add the apples, walnuts and mix
Mix in the orange juice and the cinnamon
Pour into the cake pan
Bake for 45-60 minute, until a toothpick inserted in the center comes out clean.
Let cool 10 minutes

I like to use a mixture of apples: tart, sweet, firm, crisp, and tender varieties. I do this with pies and apple sauce too. This way, you can create your own signature flavor and texture.For this cake, I pulse the apples in a food processor to create a mix of apple chunks, some small and some big. The small chunks make the cake tender and moist. The big chunks make for big surprise bites of flavor!
