Paccheri Bolognese

Equipment

Ingredients
  

  • 2 tbsp extra virgin olive oil
  • 1 red onion finely chopped
  • 2 Carrots finely chopped
  • 1 celery stalk finely chopped
  • lb ground beef
  • salt and pepper to taste
  • 2 cloves garlic minced
  • 1 cup red wine
  • 28 oz crushed or petite diced tomatoes 1 can
  • ⅓  cup tomato paste
  • 2 tbsp sugar
  • 2 bay leaves
  • 1 cup cream at room temperature
  • ½ cup shredded parmesan cheese
  • shredded basil leaves hand full
  • 1 lb paccheri pasta see note

Instructions
 

  • Heat a Dutch oven on medium heat, add the olive oil.
  • When the oil is hot, add the veggies and a pinch of salt and sauté 5 minutes.
  • Add the ground beef and a pinch of salt and pepper. Sauté until the beef is no longer pink.
  • Add the garlic and sauté 1 more minute.
  • Add the wine, crushed tomatoes, tomato paste, sugar, and bay leaves. Adjust the salt. Stir, reduce heat and let simmer for 30 minutes.
  • Remove from heat and slowly stir in the cream. *See "Pro Tip" below!
  • Place back on low heat until pasta is ready.
  • While the sauce is simmering, bring a salted pot of water to a boil and add the paccheri pasta and cook until al dente.
  • Drain the pasta and place in pasta bowls, top with the sauce, a sprinkle of parmesan cheese, and shredded basil.

Notes

Paccheri pasta is a large tube-shaped pasta. It works well with hearty sauces like Bolognese. You can use any type of pasta you like. Fettuccini or tagliatelle are great choices.

Pro tip:

Adding dairy to a hot sauce of any kind can cause the sauce to break. The milk solids become chunky and oily. The taste will be fine, but the texture is ruined.
Have your dairy at room temperature, then remove the sauce from the heat and slowly add the dairy while stirring.
Another trick is to add a spoonful or two of the sauce to the dairy and stir, then add the mixture back into the pot of sauce.
