Orzo Pasta Salad

Orzo is a wonderful Italian pasta that resembles rice. It's a class of pasta called "pastina," commonly used for soups, and also wonderful in this salad!

  • 1 cup Orzo pasta
  • 1 cup Cherry tomatoes sliced in half lengthwise
  • 3 tbsp Sundried tomatoes packed in oil, finely chopped
  • 3 tbsp Red onion chopped
  • 3 tbsp Olive oil
  • 1 tbsp Balsamic vinegar
  • 1/2 tsp Salt more or less, to taste
  • 1/2 tsp Pepper more or less, to taste
  • 1/4 tsp Dried oregano
  • 1/2 cup Feta cheese crumbled
  • 3 tbsp Fresh basil shredded


  • Bring salted water to a boil and cook pasts according to directions on package
  • While pasta is cooking, add chopped veggies olive oil, vinegar and seasoning into a large bowl
  • When the pasta is ready, drain well and add to the bowl
  • Toss thoroughly, taste test and adjust seasoning
  • When pasta has cooled to room temp, add crumbled feta and shredded basil
  • Pack in air tight container and refrigerate
