Orzo Pasta Salad
Orzo is a wonderful Italian pasta that resembles rice. It's a class of pasta called "pastina," commonly used for soups, and also wonderful in this salad!
Ingredients
- 1 cup Orzo pasta
- 1 cup Cherry tomatoes sliced in half lengthwise
- 3 tbsp Sundried tomatoes packed in oil, finely chopped
- 3 tbsp Red onion chopped
- 3 tbsp Olive oil
- 1 tbsp Balsamic vinegar
- 1/2 tsp Salt more or less, to taste
- 1/2 tsp Pepper more or less, to taste
- 1/4 tsp Dried oregano
- 1/2 cup Feta cheese crumbled
- 3 tbsp Fresh basil shredded
Instructions
- Bring salted water to a boil and cook pasts according to directions on package
- While pasta is cooking, add chopped veggies olive oil, vinegar and seasoning into a large bowl
- When the pasta is ready, drain well and add to the bowl
- Toss thoroughly, taste test and adjust seasoning
- When pasta has cooled to room temp, add crumbled feta and shredded basil
- Pack in air tight container and refrigerate
