Macaroni Salad
A cool summertime favorite, and a welcome addition to backyard BBQs and picnics.

Ingredients
- 12 oz macaroni pasta
- ¼ cup sweet pickles finely diced
- ¼ cup red onion finely diced
- ¼ cup red bell pepper finely diced
- 2 stalks celery finely diced
- ½ tsp salt
- ½ tsp fresh ground pepper
- 3 tbsp white wine vinegar
- 1 tbsp lemon juice
- 1 tsp sugar
- ¼ cup mayonnaise
Instructions
- Cook macaroni in a pot of boiling water, about 6 minutes
- Meanwhile, in a large serving bowl add the diced pickles, onion, bell pepper, and celery.
- Add the salt and pepper
- When the macaroni is done, drain and add to the serving bowl and stir
- Add the vinegar, lemon juice, and sugar, and stir
- Add the mayo and mix well
- Adjust seasonings as needed
- Refrigerate at least one hour before serving, but overnight is best
