Honey Turmeric Granola

Ingredients
  

  • 3 cups Old fashioned oats
  • 1 cup Almonds sliced
  • 1 cup Coconut shredded
  • ¼ cup Pepitas
  • ½ tsp Salt
  • 12 oz Honey
  • ¼ cup Orange juice blood orange
  • 1 tsp Real Vanilla extract
  • 1 tsp Cinnamon ground
  • 1 cup Apricots dried and chopped
  • 1 cup Cranberries dried

Instructions
 

  • Per-heat oven to 375°
  • In a large bowl, mix together the oats, sliced almonds, coconut, pepitas, and salt.
  • In a sauce pan, add the honey, orange juice, vanilla, and cinnamon.
  • Heat on medium heat just until warm, stirring frequently.
  • Pour the warm honey mixture over the oat mixture and stir until throughly mixed.
  • In a large oiled baking dish, pour the oat and honey mixture and spread evenly.
  • Bake for 35-40 minutes, stirring occasionally.
  • Remove from oven, add the apricots and cranberries and let cool.

Notes

We discovered Honey Turmeric Granola at the Sands Resort in Indian Wells a few years ago.
Serve with milk or almond milk.
My favorite way to serve is over plain Greek yogurt topped with berries and a drizzle of honey. Pair it with my Moroccan Watermelon Refresher.
With a few basic tips you can make any flavor granola you want.
Honey, maple syrup, or agave nectar make wonderful sweeteners. Add any kind of nuts and dried fruits you like. Just keep in mind that different nuts and dried fruits can burn in the oven at different rates. I usually leave them out until the last minute.
