White Chocolate Raspberry Cheesecake
The Cheesecake of Love!
Ingredients
Cookie Crust
- 7 oz chocolate wafer cookies crushed
- ¼ cup sugar
- ⅓ cup unsalted butter melted
Cheesecake Filling
- 2 cups white baking chocolate chopped
- ½ cup heavy cream room temperature
- 1 lb cream cheese room temperature
- ½ cup sugar
- 4 large eggs room temperature, separated
- 1 tbsp vanilla extract
Garnish
- 2 cups whole raspberries
- 3 cups raspberries pureed and strained
- 1 cup white chocolate chips
- 1 sprig of fresh mint optional
Instructions
Cookie Crust
- Pre heat oven to 450°.
- Oil a 9-inch Springform pan.
- In a bowl, mix the crushed cookie wafers and the melted butter.
- Press the cookie mixture into the Springform pan.
- Bake for 5 minutes and let cool completely.
Cheesecake Filling
- Reduce the oven heat to 325°.
- Melt 2 cups of white baking chocolate in a double boiler, stirring until smooth and melted.
- Remove from heat and slowly add the cream, stirring until smooth.
- Place the cream cheese, sugar, and egg yolks in an electric mixer, using the paddle blade.
- Mix on medium speed until blended.
- Add the melted chocolate and vanilla and blend until smooth.
- In separate bowl, beat the egg whites on high speed, until stiff peaks form.
- Carefully fold in the egg whites into the batter.
- Pour the batter over the baked cookie crust in the Springform pan.
- Bake 50-55 minutes.
- Then turn off the oven and leave the cheesecake in the oven, door closed, for 1 hour.
- Remove from oven, let cool completely, then chill in the refrigerator overnight.
Serving Instructions
- Run a knife around the Springform pan to release the cake.
- Garnish the outer edge of the cake with whole raspberries.
- Pour the raspberry puree in the center.
- Top with white chocolate chips and a sprig of fresh mint.
